Living in the South means that we don’t get many snow days. But last night we got the call that today would be a snow day! It was really more of an ice day, but I’ll take it.
I knew I wanted to get caught up on lesson planning, but first thing this morning, I decided to make my family some breakfast. My college-aged son and two friends just recently spent some time doing a juice fast. Wanting to be prepared, they purchased an abundance of fruits and vegetables. Needless to say, we have a lot of leftovers, including blueberries and lemons. So I decided to make homemade blueberry muffins and lemonade.
They were delicious! I also cooked two bags of fresh spinach and chopped it up so I could freeze it. I’m planning on using it to make dip for an upcoming football party we are having. We still have a lot of leftovers that we are trying to eat our way through. Somehow I doubt we will be fighting over the kale!
I did get around to the lesson planning this afternoon; I’m sure it will help in the weeks to come.
